Join us for an immersive sushi experience designed for adults and mature young chefs who want to deepen their skills and understanding of Japanese cuisine. This class blends demonstration with hands-on practice, giving you both the “why” and the “how” behind beautiful, balanced sushi.
What We’ll Explore:
🍚 Perfect Sushi Rice
Learn the fundamentals of properly seasoned sushi rice: texture, temperature, balance, and technique. We’ll discuss ratios, seasoning, and handling so your rice is restaurant-quality every time.
🍳 Tamago Technique
Watch a guided demonstration of traditional tamago (Japanese omelet), then practice the rolling and layering method that creates its signature texture and flavor.
🦪 Scallop Crudo with Truffle & Crispy Capers
We’ll prepare a refined raw scallop appetizer finished with a touch of truffle oil and fried capers for texture and contrast. We’ll discuss sourcing, slicing technique, and balancing richness with acidity and salt.
🍣 Hands-On Sushi Rolling
Master maki roll construction from start to finish. You’ll practice knife skills, ingredient balance, rolling technique, and presentation, then create your own signature roll. Chef Rachael will also show you techniques for making a beautiful sushi board.
🍶 Sauce & Seasoning Balance
Craft a bright, well-balanced soy dipping sauce and discuss how acidity, salt, and sweetness enhance sushi flavors.
🍲 Awase Dashi Foundations
Discover the building blocks of Japanese flavor with a demonstration of classic awase dashi. We’ll discuss ingredient selection and extraction technique.
🍜 From-Scratch Miso Soup
Enjoy a bowl of miso soup made with freshly prepared dashi while learning proper miso handling and finishing techniques.
This class is ideal for beginners and confident home cooks alike. Expect a collaborative, relaxed environment with both guided instruction and hands-on creation.
